Does the sleep period at tomatically get entered into the next day, or do I need to do it manually? I.e. if I enter 11:30 PM and say the period is eight hours does the app automatically enter a sleep period for the next day from midnight to 730? Or do I have to enter 30 min for the first day and 12-7:30 am fo the next day?

You just need to enter it once; create an entry at starting at 11:30 with a duration of 8 hours.
